Day 1 of 62 Days of Meat - Pollo Loco

Pollo Loco might bring up the thought of a crazy looking chicken,  that isn't to far from it.  This dish is an interesting mix of Queso Dip, Mexican grilled chicken and mexican rice.  


Take a beautiful mexican rice, put a breast of grilled chicken on it and smother it in queso dip. The perfect way to eat pollo loco, is to put a little bit of the cheese smothered rice and chicken into a tortilla fajita style.  


What a great way to start the 62 days of meat challenge.

What's the Deal?

If you're reading this, you're probably wondering what's going on in my head?  Why log what types of meat I am eating?  I took this challenge to push my culinary experience. In the next 55 days I will push myself to try new types of food, new styles of cooking, and come up with new recipes.

Every day I will log the 1 new preparation of meat, a picture of it, some facts about the ingredients, as well as the nutritional value, and hopefully how to prepare something like it.  I hope you enjoy the Journey.
