Pollo Loco might bring up the thought of a crazy looking chicken, that isn't to far from it. This dish is an interesting mix of Queso Dip, Mexican grilled chicken and mexican rice.
Take a beautiful mexican rice, put a breast of grilled chicken on it and smother it in queso dip. The perfect way to eat pollo loco, is to put a little bit of the cheese smothered rice and chicken into a tortilla fajita style.
What a great way to start the 62 days of meat challenge.
